Ecovillage Silimalombu is a multi-generational farm of the Gultom family on Samosir Island, Lake Toba. Between mango trees up to 500 years old, a lush permaculture food forest has grown. • Spinach is a source of vitamin A, vitamin C, vitamin K, iron, folate (folic acid), magnesium and manganese. Vitamin A contributes to the maintenance of normal vision, normal skin and the normal function of the immune system. Vitamin C contributes to the protection of cells from oxidative stress and the normal function of the immune system. Vitamin K contributes to normal blood clotting and the maintenance of normal bones. Iron contributes to normal oxygen transport in the body. Folate contributes to normal maternal tissue growth during pregnancy. Magnesium contributes to normal muscle function and normal nervous system function.
• Spinach contains antioxidants, such as flavonoids and carotenoids, which show activity in laboratory tests. Observational studies have found associations between a high intake of leafy green vegetables and a lower frequency of some chronic diseases. Such studies cannot prove cause and effect, and spinach is not a means to prevent or treat any disease.
